Especially with all this crazy rain we have received over the last year and a half, in Pereira Colombia! We need more pancakes in our lives. They make great snacks too, if you are trying to cut back on sugar and wheat products.
Sometimes, on those days where the sky is grey and rainy, I am transported back to my hometown in Reno, Nevada where the skies are always clear and sunny. I really miss these small things about my home country. Then I know. It’s time to make Banana Pancakes.
Depression and homesickness is a real thing that people who live abroad experience. A couple years ago, after my son was born, I had some dark moments of my own. I wouldn’t call it post-partum depression. Its an ongoing sadness. It hits me whenever I reach the constraints of my ability to adapt to Colombian culture. Ok, enough talk! Here it is. The one thing that always helps me feel better…
Is to make pancakes. It sounds so simple. But, even Banana Pancakes are so effective (great way to use up bananas which are turning too!) in reminding me of home, of when I was a teenager on the show circuit with my horse(s). I definitely associate pancakes with my childhood, and with American culture. Its like curling up with your favorite blanket, and a good book. Comfort food. And it makes me feel better, when I feel homesick for my home country.
Gluten-Free Banana Pancakes
These pancakes are wonderful when warm, with a moist texture, and sweet finish from the banana and little bit of panela or brown sugar. Banana Pancakes taste wonderful with fresh honey, a bit of cream or plain as a snack. They are my 2 year olds favorite pancake. How do I know? They are the only pancakes he will eat after I initially make them. He has this funny thing about cold pancakes. You wouldn’t think so from a two year old, but he likes his food fresh and well-prepared! Buen provecho!
